Ingredients

• 2 cauliflower florets
• 15g mature cheese
• 1 egg
• White sauce

Method

1. Cook cauliflower until very soft.
2. Make cheese sauce.
3. Mix cauliflower and egg yolk into sauce.
4. Fold in whisked egg white.
5. Bake until lightly golden.

Soft texture ideal for transition through Purée stage.
